So, what exactly, are you left with when stevia ferments, nutritionally speaking. I am cautious that just because it has improved flavor, might it have created something dietarially undesirable? I am all in favor of fermented foods and just don’t understand the chemistry by which flavor is improved.

So, I am wondering what exactly is happening during the fermentation process of stevia. What is being created and how does that effect does that have on one?

Also is the final product sweeter than the initial blend. I understand that it has a better, more pleasant taste, but is it actually sweeter?

I made mine with the THM Stevia and after 48 hours, it seems to have just settled back to the bottom of the jar. Although, when I taste it, it is sweet. Should I just shake it back up? Any idea what might have happened?
