It’s the lifeblood of eating Trim Healthy Mama style.
Okay….not really…
But it sure is a yummy low-carb dessert that will satisfy your chocolate cravings while boosting your metabolism. A quick and easy dessert is vital to making Trim Healthy Mama work for us in our small RV space.
With the perfect quantities and ingredients, I’ve figured out to make skinny chocolate just right for our tastes.
First, let me tell you that I’m really NOT a big dark chocolate fan. I wish I were, but I sit somewhere between milk and dark. Someday I’ll get my big girl panties on and graduate to dark. Needless to say, the original Trim Healthy Mama Skinny Chocolate was too dark for my tastes, but here are our 3 favorite tweaked flavor combinations.
- Coconut Almond
- Peppermint Protein
- Peanut Butter
But first, a few tips…
My Top 5 Tips for Perfect Skinny Chocolate
- Use Xylitol or Truvia – these 2 sweeteners are the only ones I’ve fully embraced for chocolate. Stevia extract is just too bitter by itself.
- Grind the Sweetener – this is super important. If you don’t grind the sweetener, you’ll end up with really gritty, bitter skinny chocolate. Been there, done it, I don’t recommend it.
- Add Salt – this may sound weird, but the salt brings out the sweetness, and it’s yummy!
- Add Protein Powder – I love this Protein Powder. The protein powder definitely lightens up the chocolate to a place somewhere between dark and milk chocolate.
- To Remove From Dish – I refrigerate my skinny chocolate for a couple of hours and then flip the dish with the hardened skinny chocolate upside down over the sink. Then I run warm water over the bottom of the dish. It comes out easily that way. I cut my chocolate squares up and store them in the freezer.
And now the recipes… all of them are S for Satisfying.

Coconut Almond Skinny Chocolate
Ingredients
- ½ cup coconut oil
- ¼ cup unsweetened cocoa powder
- 3 ½ tbsp. Xylitol or Truvia powdered
- ¼ tsp. salt
- 1 tsp. almond extract
- 1 tsp. vanilla extract
- ½ cup dried coconut shredded and unsweetened
Instructions
- Mix all the ingredients except the coconut in a bowl. If your coconut oil is at a solid, heat gently to make stirring easier.
- After ingredients are mixed well, stir in coconut.
- Pour into a glass dish, refrigerate for a couple hours before cutting.

Peppermint Protein Skinny Chocolate
Ingredients
- ½ cup coconut oil
- ¼ cup unsweetened cocoa powder
- 3 ½ tbsp. Xylitol or Truvia powdered
- ¼ tsp. sea salt
- 1 scoop vanilla protein powder
- ½ tsp. vanilla extract
- 2 drops of peppermint essential oil
Instructions
- Mix all the ingredients in a bowl.
- If your coconut oil is at a solid, heat gently to make stirring easier.
- Pour into a glass dish, refrigerate for a couple hours before cutting.

Peanut Butter Skinny Chocolate
Ingredients
- ½ cup coconut oil
- ¼ cup unsweetened cocoa powder
- ½ cup natural peanut butter unsweetened
- 4 ½ tbsp. Xylitol or Truvia powdered
- 1 tbsp. vanilla
- ¼ tsp. sea salt
Instructions
- Mix all the ingredients in a bowl. If your coconut oil is at a solid, heat gently to make stirring easier. Pour into a glass dish, refrigerate for a couple hours before cutting.

Other Flavoring Ideas
OrangeVanillaAlmondRum At the VERY least, add vanilla extract to your chocolate. As a general rule, I recommend you start with 1/2 of a teaspoon for extracts. For essential oils, I’d start with 2 drops and go up according to your tastes. So what have you tried? I’d love your ideas on making different versions of this staple.

I like to make mine in mini silicon pans…then I can easily pop them out. I just made a batch today! Normal style, but with a dollop of coconut butter in the middle of each one. Can’t wait to try your PB version!!!

I use Truvia. The THM book shows 3-4 TEASPOONS yet these recipes call for TABLESPOONS. Is that a typo or is it because it is xylitol and not truvia?
Hi Kelly, I know for me, when I made Skinny Chocolate in the proportions in the book, it was not sweet enough. It is not a typo but you may want to sweeten and taste as you go. I don’t have my book with me right now but going off my memory, it called for NuNaturals too didn’t it? I know the one with peanut butter needed more sweetener because it has quite a bit more bulk. Hope this helps.

Does the amount of protein powder push the peppermint one into s?
No, it doesn’t Kelli. The protein powder adds creaminess and ups the protein. This chocolate is already an S because of the higher fat content. In fact, all the skinny chocolate is in the S category.
Just wondering if you only use the protein powder for the peppermint version. I also like milk chocolate more than dark and wondered if you could add the protein to the coconut recipe? Thanks! Also, I only have the Jay Rob chocolate protein. Would that work?
Hi Mandy, I do not add the protein powder to the peanut butter one as it’s very creamy without it. You could try adding it to the coconut almond, I think it’d be a yummy addition. Love my protein powder!

New to THM and have a baking question. When using powdered Truvia do you measure the 4 1/2 T of Truvia, dump into coffee grinder, then dump all powdered contents into recipe OR do you grind the Truvia and then measure out the 4 1/2 T? I know this may be a dumb question, but once the Truvia is powdered there is more than 4 1/2 T. THANKS Julie! You may be laughing your head off right now!!!!
Not a dumb question at all Mandy. I’m sorry for my slow reply. I’m lazy and I usually grind my Truvia and Xylitol all at one time. It does bulk up when ground so you’d likely end up with Skinny Chocolate that was too sweet. I store my powdered Truvia and Xylitol in a container and it’s always ready to go. I’m so not laughing at you. 🙂 Great question!
Mandy – I’m glad you asked the question because I had the same one :-). I will be using NuStevia which is a powdered form of stevia and dissolves in anything, even cold things.

Julie, I think others may not have the question so much if, instead of saying “the ingredient, powdered”, you placed the word powdered in front of the ingredient. There is a similar recipe on a blog and the blogger has most of the main ingredients times four (coconut oil, pb, cocoa, etc) BUT she uses “1 cup Xylitol, ground to powder” which made it seem like she measures out a whole cup and grinds it to powder. But, you said, when ground, it bulks up?? So, this seems way disproportionate to your recipe!!
I have 6 children who love my Quest craving protein cups, and I’m looking to replace those expensive treats with this peanut butter chocolate recipe. Really want to get the proportions right, and this aspect of the sweetener amount has me at a dead, ignorant stand still. Any input?
I am thinking to start with your recipe and increase as needed. Just, grinding Xylitol and then measuring or vice-versa, and how much will make it how sweet… I’m stuck. Ack! 😉
I’m sorry Tamara…I haven’t made skinny chocolate in so long! But the last time I made it, it wasn’t sweet enough for me so I added more powdered Xylitol. I think you really have to start with the base and add sweetness to your taste, and our tastes are changing all the time. (that may have been the most unhelpful reply I’ve ever put up – lol)

I’m wanting to try the peppermint version now, but I only have unflavored protein powder – is there any way I can use this instead of the vanilla protein powder? Would I add vanilla extract?

I added vanilla extract to the original recipe in the book. Then I put 8 cupcake liners in a muffin tin, and dropped 3 whole almonds in each one. Then I spooned in the chocolate and popped them in the fridge. Yummy! I’m making your peanut butter version next!
I make the PB Skinny MILK Chocolate but using only 1/4c crunchy natural PB & adding 1/4c heavy cream. 🙂
I chill it on a wax paper lined plate so it lifts off easily. I place the plate sized disk of chocolate into a ga ziploc baggie, zip, & break into pieces on the edge of my counter. Store in freezer.

Hey, I haven’t had the best success making skinny chocolate but your recipes have inspired me to try it again. I think my problem is the truvia grainy issue. Since I don’t have a coffee grinder, I tried grinding truvia in vitamix dry container, but it didn’t grind evenly. I guess I need to buy a coffee grinder. Is that how you grind yours? How much at a time? Thanks!!
Yes, I do use a coffee grinder. I was going to try my Blendtec but haven’t yet. Now I’m wondering if it will work. It’d be quicker if I could. Did you try pulsing your Vitamix?

How do you grind the Truvia? I have a blender and a food processor, but not a coffee grinder. Should I just bite the bullet and pick up an inexpensive one for this task?
I do think the coffee grinder is the only way to go. Wish there was a way to do bigger batches, but the coffee grinder is pretty quick and inexpensive.
I use vanilla egg white protein powder and and have even added a scoop of raw fiber. I also love freezing it for about 10 minutes before using a kitchen knife to break it into pieces. They end up random shapes and sizes, but are oh SO delightfully crunchy.

Hi, I’m brand new to thm and your pb skinny chocolate is the first skinny chocolate I’ve made. I used about 4TBs of thm sweetblend. The sweetener is so strong. Is this just a flavor I have to get used to or did I use way too much? I was so hoping the sweetblend would be better for me than stevia, but no such luck. Please tell me this gets better.
I’m sorry Bekki! I’ve never tried the THM sweet blend. But I did want to write you and tell you to not lose heart…your tastebuds do adjust (and it does get better). I always start out with less Stevia because if you add too much, it goes south fast.
I make the skinny chocolate with sweet blend. I grind in with a mortar and pestle. We like it with protein powder ( I use Greens First’s Dream Protein), peanut butter, coconut and a few drops of peppermint or orange EOs. I just can’t believe how easy it is to make delicious chocolate!!
Sweet blend is stronger so you use 1/2 the amount. 2 tbs for this recipe is perfect.

I made these today. Thanks for posting the recipes! I don’t drink coffee and so I didn’t have a coffee grinder on hand, but I did have some stevia drops so I squeezed in a dropper full and tasted and then added another dropper and tasted and it was to my liking. Might be another sweetener option for others too 😉
“Grind the sweetener” = Epic Success! Two weeks ago my 9 yo was diagnosed Type 1 Diabetes. I have been trying very hard to make healthy treats. This Skinny Chocolate (PB version made w/almond butter) was soooo good…A winner for my entire family of 8!

If you want more of a dark chocolate, omit the protein powder. For the peanut butter one, you can try the peanut butter flour. I’ve not experimented with this myself but it’s a place for you to start. 🙂
In the health section of our supermarket we have an hazelnut cocao spread (similar to peanut paste). I mix in some stevia to sweeten and it tastes just like Nutella. I am looking at putting it in the middle of my next batch of chocolate, to give a yummy centre.

This is truly my very favorite Skinny Chocolate recipe. The only thing I do to tweak is add about 3/4 C of Coconut cream concentrate (aka: Coconut butter) from Tropical Traditions in addition. It makes the chocolate less dark and more creamy. Though I love all three and make all three, my fav is the peanut butter.

What oil could you use instead of the coconut oil? I am very allergic but am wanting to have something to snack on.
How about Palm oil? You would not get the weight loss boosting benefits but it is the healthiest solid oil I know of besides coconut oil.

I made the peanut butter recipe with some protein powder. Just threw it all in the blender. OH MY GOSH…I might have to invest in peanut butter and cocoa stock because it is SOOOO good! I felt like I was eating peanut butter cups from the store!
Peanut Butter version is wonderful — though I used Almond Butter. (Also used Xylitol.) I had more or less decided Skinny Chocolate wasn’t for me, just didn’t seem to enjoy it. But these — well, I’ve changed my mind! I might even be able to substitute this for the Lily bar which are way to expensive to enjoy the way I’d like to. Many thanks to you!

I love this and refer to it when making my skinny chocolate. My versions now include a cherry almond, maple walnut and my personal favorite lemon pepper! Every time I make skinny chocolate it’s at least a triple if not quadruple batch with all the flavors I think I might be in the mood for. Tonight I thought I would skip the lemon pepper but I just couldn’t so I ended up with 5, yes count them 5 different flavors! I hope we’re set for awhile now…..thanks for the tips. They make a huge difference!

HI, I just tried to make this chocolate and for some reason part of the coconut oil separated from the rest of the chocolate leaving a layer of CO on top. Has this happened to anyone else? How can I keep that from happening?

Hi, wanted to let you know I blend all dry ingredients in my Vitamix. This solves the problem of grinding the trivia 🙂 I then just pour melted coconut oil into blender and blend some more. Super easy 🙂

Made this with with 1/4 cup natural pb and 1/4 peanut flour and everything else the same. It was great licking the spoon, and I can’t wait to eat it cold too.

Hi!! I’m curious to try this skinny chocolate but I know that sorbitol makes me extremely sick – and xylitol isn’t much better …. This other sweetener (truvia) is new to me – does it tend to be a fairly benign sweetener for people with Tummy issues??
Yes, Truvia has erythritol in it and that does not cause tummy discomfort. It is my sweetener of choice.
This is IT! I finally found the GO-TO skinny chocolate! I am more than excited about it! I made the peanut butter chocolate last night and I can not get enough…..though I am trying not to eat TOO much! Love the peanut butter recipe! We have dairy free protein powders which are a bit less creamy and sweet so we haven’t tried using them yet. We make our chocolate 2-3 times a week now! Before this I couldn’t stand skinny chocolate! Thanks so much 🙂 We are even buying cheap advent calendar, opening them up at the top, and replacing the cheap sugar laden chocolate with this treat for our kids!!!
Can we use stevia or sweet blend instead of something we have to “grind” to powder?
I can’t wait to try the peanut butter one. I use to make the original recipe I would chop up nuts put a few nuts in each of the silicon models and pour the chocolate on top. I love those but did t like the trivia grit. What type of grinder do you use. When you say gentle heat the coconut oil what is your method. The silicon models are perfect size serving and op right out. Plus I love the different shapes.
Would you recommend using gentle sweet for the pb recipe? If so, how much? If I used that, would I still have to grind it?

Yes, I use homemade version of Super Sweet — 1 tsp stevia extract powder to 1 cup erythritol, ground in a coffee grinder — for skinny chocolate.😊
PNB Skinny Chocolate is the bomb! Easy peasy with Swerve powdered sugar, a silicon mold, and a few minutes in the freezer. My normally super self-disciplined hubsters couldn’t stop eating them. So much for my week’s worth of treats!
